MAPLE AND WALNUT ICE CREAM

INGRDITENTS
1. 115 g (grams) / 4 ½ oz granulated
sugar
2. 115 g (grams) / 4 ½ oz walnut halves
3. 100 g (grams) / 4 ½ oz maple syrup
4. 500 g (grams) / 20 floz fresh milk
5. 150 g (grams) / 6 oz caster sugar
6. 4 eggs yolks
7. 250 ml (milliliters) / 10 floz
cream, whipped
STEP BY STEP METHOD
a) To make the
praline, heat the granulated sugar in a heavy-based saucepan with just enough
water to moisten.
b) Boil the syrup
to 248° F (120° C).
c) Add the nuts,
remove from the heat and stir until the nuts are coated in the syrup.
d) Return to the
heat, stirring constantly, until the sugar caramelizes.
e) Turn on to a
lightly oiled cold surface and leave to cool.
f) Reserve half of
the praline for decoration and reduce the reminder to a powder in a blender or
food processor.
g) In a heavy-based
saucepan, bring and milk to just simmering point.
h) Beat the sugar
and egg yolks together in a bowl and stir in the flavored milk.
i)
Pour into the rinsed pan and cook gently.
j)
Stirring constantly, until the mixture thickens.
k) Do not allow to
boil.
l)
Pour into a container, cover and freeze until just
becoming firm.
m) Turn into a bowl
and beat well.
n) Fold in the
cream and praline powder.
o) Spoon the
mixture back into the container, cover and freeze until firm.
p) About 30 minutes
before serving, transfer the ice cream to the refrigerator.
q) Serve decorated
with the reserved walnut praline.
