HOW TO COOK STEP BY STEP TAMARIND
EGGS

INGRDITENTS
1. 4 hard-boiled eggs.
2. 2 medium onions, finely sliced
3. 6 tablespoons oil
3. 1 ½ teaspoons standard four spices (chilies,
turmeric, ginger and garlic all around)
4. 450 ml (milliliters) water
5. 6 tablespoons tamarind extract (imli
water)
6. 1 ½ teaspoons salt
7. Curry leaves
8. Green chilies as needed
STEP BY STEP METHOD
a) Gently prick the
eggs all over with a fork and set them aside.
b) Fry the onions
in the oil until they are transparent.
c) Add the standard
four spices and cook.
d) Stirring all the
time, for a few minutes.
e) Pour in the
water and tamarind, add the salt and curry leaves, and boil for about 10
minutes or until the sauce is reduced to half its original quantity.
f) Stir regularly
to prevent the sauce from ticking to the pan.
g) Add the eggs and
whole green chilies with their stalks.
h) Cover the pan
and leave over a very low heat for about 10 minutes.
i)
During this time the oil should surface.
j)
Serve hot.
