STUFFED PANCAKES

INGRDITENTS
Batter
1. 6-7 tablespoons milk
2. 1 egg
3. A pinch of salt
4. 1 tablespoons sugar
5. About 150 g (grams) flour
6. 50 g (grams) butter
Filling
1. 75 g (grams) butter
2. 100 g (grams) sugar
3. A pinch of salt
4. Grated rind of ¼ lemon
5. 3 eggs, separated
6. 300 g (grams) cheese
7. 6 tablespoons single cream
Sauce
1. 1 egg
2. 6 tablespoons milk
3. 1 tablespoons sugar
4. Icing sugar for dusting
STEP BY STEP METHOD
a) Combine the milk,
egg, salt and sugar in a bowl and beat in enough flour to give a thin batter.
b) Melt the butter
and fry the batter to make a thin pancakes, about 15cm / 6 inch in diameter.
c) Cream the butter
with 75 grams of sugar, the salt, lemon rind and egg yolks.
d) Stir in the
cheese, cream and raisins.
e) Whisk the egg
whites with remaining sugar until stiff and fold into the mixture.
f) Set the oven to
moderate (180°C, 350°F, gas4).
g) Butter a baking
dish.
h) Spread the
filling on the pancakes, roll them up and arrange in the dish.
i)
Beat the egg with the milk and sugar, pour over the
pancakes and bake for 20 minutes until it gets golden brown.
j)
Sprinkle with icing sugar.
k) Makes 6 pcs.
